Our dream is for every neighbourhood in Brussels to have a restaurant like Transvaal. This wholesome little restaurant in a former butcher’s has a convivial atmosphere and excellent food made with fresh local ingredients.
From a short but varied menu, we chose the Vieux Cantal croquettes (€14). They were delicious but the salad that came with them made all the difference. Neglected in many restaurants, it was totally fresh and skilfully prepared, with cucumbers, chervil, raw button mushrooms, and a morel vinaigrette. The main course raised the bar even higher: roast cod loin, pea mousseline, chanterelles, and broad beans (€26), cooked to perfection!
