Brussels is overflowing with talent. Sceptical? Make your way to Knees to Chin. This new establishment, a stone’s throw from the Kastelein/Châtelain area, is perfectly attuned to current tastes. How did they do it? By restoring the reputation of the spring roll, which is very much looked down on by most chefs. Knees to Chin offers a refined version inspired by Vietnam. The concept was developed by a highly focused young woman by the name of Roxane Gernaert. In her little eatery you start off at a counter, over which a board outlines the dishes of the day. You can choose between various types of spring roll. On our visit, we opted for the “Today’s Special”, which meant one with beef and another with sweet potatoes. Served with a side dish, this special, with its two rolls, came to…€8.50 – and there was a free flask of jasmine tea on the table too. An incredibly reasonably priced package. And what’s more, it is good, healthy stuff. The beef roll was clearly handmade. Each mouthful, wrapped in rice paper, contained raw courgette, thinly sliced beef that had been perfectly oven-cooked, basil, sunflower seeds, and rocket. For our taste, there was a little too much rocket, which is quite bitter. Accompanied by a citronella sauce – you decide how much you want – this roll was a concentration of freshness. As was the sweet-potato one, made extra seductive by the presence of little caramelised onions that added flavour and crunchiness; you could season this one with an avocado sauce. The bowl of rice that came with our dish was quite extraordinary: sticky, as it should be, it came with a peanut sauce with hints of pineapple and sesame. Matching this decidedly homemade approach, the decor features plants and light fittings hanging from the ceiling, as well as some very successful upcycling touches – jam pots holding cutlery, jars as lampshades, etc. An eatery to be visited as often as
possible.

FR ❙ Bruxelles est bourrée de talents. Sceptique ? Foncez chez Knees to Chin. Cette enseigne récente, à deux pas du quartier du Châtelain, a tout compris au goût du jour. Comment ? En redorant le blason du rouleau de printemps, spécialité regardée de haut par la plupart des chefs. Knees to Chin décline une version délicate inspirée par le Viêtnam. Le concept est signé Roxane Gernaert, une jeune femme qui a de la suite dans les idées. Sa petite cantine s’ouvre sur un comptoir au-dessus duquel un tableau vert reprend le menu du jour. On peut faire son choix parmi différents types de rouleaux de printemps. Lors de notre visite, on a choisi le Today’s Special, soit un rouleau au bœuf, ainsi qu’un autre à la patate douce. Proposée avec un side dish, la formule comprenant deux rouleaux revient à… 8,50 euros – il faut ajouter à cela un thermos de thé au jasmin déposé gracieusement sur la table. Un package incroyablement démocratique. En plus, c’est bon et sain. Le rouleau de bœuf respire le fait main. On croque tout à la fois, emballé dans une galette de farine de riz : courgette crue, mince tranche de bœuf parfaitement cuite au four, basilic, graines de tournesol et roquette, ce dernier ingrédient, fort en amertume, étant un peu trop présent à nos yeux. Accompagné d’une sauce à la citronnelle que l’on dose selon son envie, le rouleau est un condensé de fraîcheur. Idem pour celui à la patate douce, tout aussi séduisant en raison des petits oignons caramélisés qui ajoutent saveur et croquant. On l’arrose de sauce à l’avocat. Le bol de riz qui accompagne est carrément dingue : collant comme il se doit, il est nappé d’une sauce cacahuète aux notes d’ananas et de sésame. En phase avec cet esprit très home made, la décoration de l’endroit est rythmée par des plantes et des luminaires qui tombent du plafond, ainsi que par des touches upcycling – boîtes de conserve pour ranger les couverts, bocaux en guise d’abat-jours… – particulièrement bien vues. Bref, une cantine à fréquenter autant que possible.

NL ❙ Brussel heeft talent zat. Dat bewijst deze week Knees to Chin, dat onlangs opende vlak bij de Kasteleinswijk en perfect de vinger aan de gastronomische pols heeft. Hoe? Door het blazoen op te poetsen van het lenterolletje, een specialiteit waarop nog steeds door heel wat chefs wordt neergekeken. Knees to Chin biedt een verfijnde versie van het lenterolletje aan en put daarvoor inspiratie uit de Vietnamese keuken. Het concept werd bedacht door Roxane Gernaert, een jonge vrouw die ze alle vijf netjes op een rij heeft. Uit de verschillende soorten lenterolletjes namen wij de ‘today’s special’, met rundvlees, en een lenterolletje met zoete aardappel. Voor 8,50 euro krijg je twee lenterolletjes en een bijgerecht, met zelfs een thermos jasmijnthee toe. Een ongelofelijk democratische formule, die bovendien lekker en gezond bleek te zijn. Het lenterolletje met rundvlees bewees meteen dat hier alles huisgemaakt is. We peuzelden alles tegelijk op: het pannenkoekje van rijstbloem, gevuld met rauwe courgette, een sneetje perfect gebakken rundvlees, basilicum, zonnebloempitten en ten slotte raketsla, waarvan de bitterheid naar onze smaak iets te fel overheerste. Versheid in een jasje, vergezeld van een saus op basis van citroenkruid. Hetzelfde gold voor het lenterolletje met zoete aardappel, geserveerd met een avocadosaus, die net zo verleidelijk was door de gekaramelliseerde uitjes die smaak en een knapperige beet aan het geheel toevoegden. De bol rijst die erbij werd geserveerd, was ronduit mesjogge: kleverig (zoals het hoort), en overgoten met een pindasaus met ananas- en sesamtoetsen. Helemaal in lijn met de homemade sfeer, wordt de inrichting van de plek bepaald door planten en lampen die van het plafond naar beneden hangen, alsook door een paar upcyclingelementen: conservenblikken voor bestek, bokalen als lampenkappen… Hier komt u best zo vaak mogelijk over de vloer.
