L'Atelier de Nicolas

A few years ago, we wrote a glowing review in this column of Parachute Parc, a delightful little restaurant where they served “bistronomic” dishes even before the term was invented. So we were happy to make another visit: even though it is now called L’Atelier de Nicolas, little or nothing has changed in the attractive interior or in the view of the greenery in the Tenbosch park. Nicolas Rivière, whose previous gigs included Rouge Tomate, is the chef. In his atelier – or playground where a chef can elaborate his flights of fancy – Rivière creates a fresh, healthy, and refined array of dishes. The day’s menu, which changes every day in line with what the market has to offer, fits on a single blackboard. For our starter, we had a ceviche of hake with lime, ginger, spring onions, mint, and pickles (€15). The acidity of this Latin American marinade technique makes the raw fish seem cooked; the spicy ingredients, moreover, add a wonderfully fresh, piquant touch. We were completely won over – and we even surreptitiously dipped into our companion’s velouté of caramelised witlof/chicons (Belgian endives) with North Sea shrimps and masala (€13) – and that, too, was delicious. After that powerful start, sadly, the main courses failed to maintain equally high standards, for our fillet of duck with honey, candied apricots, and almonds (€23) was good, but nothing special. And our dessert was kind of run-of-the-mill too: we had hoped that a chef with his own playground would come up with something more inventive than a cheeseboard or a tarte Tatin. We decided to try the “coulant” – which is really just another word for “moelleux” – but, alas: ten out ten for flavour…but the only liquid on our plate was a minuscule little scoop of vanilla ice cream alongside the coulant, which was half-way melted by the time it reached us. If everything had been of the same quality as our starter, this establishment would have received an extra star.

NL ❙ Enkele jaren geleden schreven we in deze rubriek een zeer lovend stuk over Parachute Parc, een leuk restaurantje waar men al bistronomische gerechten serveerde nog voor de term was uitgevonden. Het deed ons dan ook plezier om nog eens terug te keren naar dit adres, want hoewel het tegenwoordig L’Atelier de Nicolas heet, is er aan het knappe interieur en het groene uitzicht op het Tenboschpark weinig tot niets veranderd. In de potten roert chef Nicolas Rivière, die eerder onder meer in de keuken stond van Rouge Tomate. In zijn ‘atelier’ – of de speeltuin waar de chef zijn fantasietjes kan uitwerken – brengt Rivière een fris, gezond en verfijnd aanbod dat op één krijtbord past en om de twee dagen verandert in functie van het aanbod van de markt. Als voorgerecht namen we een ceviche van heek met limoen, gember, bosuitjes, munt en pickles (€15). Deze Latijns-Amerikaanse marinadetechniek geeft de rauwe vis door zijn zuurte een gekookt aspect, en de pittige ingrediënten geven een heerlijk frisse, kruidige toets. We waren helemaal verkocht, en ook de stiekeme lepel in de velouté van gekaramelliseerd witloof met grijze noordzeegarnalen en masala (€13) deed ons inwendig jubelen. Deze krachtige start vond helaas geen vervolg in de hoofdgerechten, want onze eendenfilet met honing, gekonfijte abrikozen en amandelnoten (€23) was in orde, maar niet echt bijzonder. En ook het nagerecht was een beetje middelmatig: we hadden gehoopt dat een chef in zijn eigen speeltuin iets vindingrijker uit de hoek zou komen dan met een kaasplank of een tarte tatin. We besloten dan maar om de ‘coulant’ – gewoon een ander woord voor ‘moelleux’ – eens uit te testen, doch helaas: tien op tien voor smaak... maar het enige vloeibare op ons bord was het minuscule bolletje vanille-ijs ernaast, dat onderweg al half gesmolten was. Was alles op het niveau van het voorgerecht gebleven, kreeg dit restaurnat zeker nog een ster extra.

FR ❙ Il y a quelques années, nous avons écrit un article très élogieux sur Parachute Parc, un chouette petit resto où l’on servait des plats « bistronomiques » avant même que ce terme ne soit inventé. Cela nous a fait plaisir d’y revenir car, même si aujourd’hui le lieu s’appelle L’Atelier de Nicolas, le bel intérieur et la vue sur la verdure du parc Tenbosch ont peu ou pas changé. Aux fourneaux se trouve le chef Nicolas Rivière, qui a déjà œuvré dans les cuisines de Rouge Tomate, notamment. Dans son Atelier, Rivière propose un menu sain et raffiné qui tient sur un tableau noir et change tous les jours en fonction de l’offre du marché. En entrée, nous avons pris un ceviche de colin au citron, gingembre, oignons grelots, menthe et pickles (€15). Avec son côté acidulé et ses ingrédients aromatiques, cette marinade latino-américaine donne au poisson cru un aspect cuit et une délicieuse touche de fraîcheur piquante. Nous étions sous le charme et notre cuillerée volée en face dans le velouté de chicons caramélisés aux crevettes grises de la mer du Nord et au massala (€13) nous a aussi fait jubiler intérieurement. Ce début en force ne s’est malheureusement pas prolongé. Notre filet de canard au miel, abricots confits et amandes (€23) était correct, mais pas vraiment exceptionnel. Et le dessert était lui aussi un peu moyen : on avait espéré qu’un chef qui opérait dans son propre terrain de jeu pourrait proposer des plats un peu plus inventifs qu’une assiette de fromages ou une tarte tatin. Nous avons choisi de tester le coulant. Hélas... 10 sur 10 pour le goût... mais la seule chose vraiment coulante de notre assiette était la minuscule boule de glace vanille qui était déjà à moitié fondue. Si tout avait été au même niveau que l’entrée, ce resto aurait certainement mérité une étoile en plus.
