Het Italiaanse restaurant Pantalone aan de Ninoofsesteenweg vierde onlangs zijn twintigste verjaardag. Om aan zijn derde decennium te beginnen heeft de zaak een nieuw elan gekregen. De inrichting werd nog niet lang geleden volledig vernieuwd – ook al moeten de nepeffecten doen vermoeden dat men in een eeuwenoude ruimte zit met vervaagde fresco’s op de muren. Naar onze smaak een beetje over the top, maar best gezellig voor een avondje. Tijdens ons bezoek bleek duidelijk dat Pantalone een bruisend familiebedrijf is. De zoon en dochter van chef Raffaele Chiappetta zorgen nu voor versterking in de zaal, terwijl hijzelf onvermoeibaar in de potten blijft roeren. Hij besteedt daarbij bijzondere aandacht aan streekspecialiteiten. Zo komt het dat je hier behalve de gebruikelijke pizza’s en pasta’s ook minder doordeweekse gerechten kunt vinden als braciole (rolletjes rundvlees met pancetta, selder in een tomatencoulis en orecchiette uit Bari), frastagliate al salto (verse pasta met artisjokken en krokante stukjes coppa-ham) of paccheri all’Amalfitana (pasta met courgettes en basilicum). Voor 29 euro kun je een driegangenmenu (plus koffie) samenstellen, maar je kunt ook gewoon à la carte eten. Als voorgerecht bestelden we een van de specialiteiten van het huis: vongole veraci spadellate con pomodori di collina (venusschelpen in een sausje van kerstomaatjes) – niet goedkoop voor 17,50 euro, maar wel bij de betere die we ooit aten. Vervolgens lieten we ons een suggestie aanpraten – een verdienstelijke scaloppina Val d’Itria, kalfsvlees met gesmolten scamorza (€22) – geserveerd met een lekkere, huisgemaakte pasta (ook een almaar schaarser goed bij Brusselse Italianen). Alleen het nagerecht stelde wat teleur: onze glace aux figues bleek niet meer dan een vanille-ijsje te zijn, met enkele stukjes gekonfijte vijg – een beetje povertjes voor 8,40 euro.

Ça peut signifier deux choses : soit le chef prépare doucement sa pension et les rideaux de jadis pendent encore aux fenêtres, soit l’établissement bénéficie d’un nouvel élan pour entamer une troisième décennie. C’est la deuxième option qui semble être d’actualité ici. La déco a été entièrement rénovée il y a peu - même si les trompe-l’œil doivent suggérer que l’on se trouve dans un lieu séculaire, avec des fresques patinées aux murs. Un peu too much à notre goût, mais néanmoins très agréable pour une petite soirée. Le Pantalone est une trépidante affaire de famille. Le fils et la fille du chef Raffaele Chiappetta sont venus prêter main forte en salle tandis que ce dernier demeure, infatigable, aux fourneaux, en accordant une attention particulière aux spécialités régionales. En plus des pizzas et des pâtes habituelles, on trouve donc des préparations moins courantes comme des braciole (roulades de bœuf à la pancetta et au céleri), des frastagliate al salto (pâtes fraîches aux artichauts et aux morceaux de coppa) ou des paccheri all’Amalfitana (pâtes aux courgettes et au basilic). Pour 29 euros, on peut composer un menu trois services (plus café) ou simplement choisir à la carte. En entrée, nous avons commandé une spécialité de la maison : les vongole veraci spadellate con pomodori di collina (palourdes poêlées aux tomates cerises) – pas données (€17,50), mais parmi les meilleures que nous avons mangées. Nous nous sommes ensuite laissés convaincre par une suggestion, une appréciable scaloppina Val d’Itria (escalope de veau à la scamorza fondue, €22), servie avec de délicieuses pâtes maison (qui se font de plus en plus rares parmi les restos italiens de Bruxelles). Seul le dessert était un peu décevant : notre « glace aux figues » s’est révélée n’être rien de plus que de la glace vanille surmontée de quelques morceaux de figue confite. Un peu peu pour 8,40 euros.

--EN-- Pantalone is an Italian restaurant on the Ninoofsesteenweg/chaussée de Ninove that recently celebrated its twentieth birthday. Now that can mean one of two things: either the chef is gradually winding down and the place still has curtains from the year dot or the establishment has developed a new impetus as it faces into its third decade. The latter turns out to be the case at Pantalone. The interior was completely revamped not so long ago – although its fake effects give the impression that you are sitting in an age-old room with fading frescos on the walls. A bit over the top for our taste, but a pleasant enough place to spend an evening. During our visit it became clear that Pantalone is also a lively family business. Chef Raffaele Chiappetta’s son and daughter now work in the dining room, while he labours tirelessly over his pots. He takes regional specialities particularly seriously. So as well as the usual pizzas and pastas, you can also find less standard dishes here such as braciole (beef rolls with pancetta, celery in a tomato coulis, and orecchiette from Bari), frastagliate al salto (fresh pasta with artichokes and crisply pieces of coppa ham), and paccheri all’Amalfitana (pasta with courgettes and basil). For 29 euro you can have a three-course set meal (plus coffee); or you can just eat à la carte. For our starter we ordered one of the house specialities: vongole veraci spadellate con pomodori di collina (venus shells in a cherry-tomato sauce) – not cheap, at €17.50, but one of the best of its kind we have eaten. Next we allowed ourselves to be persuaded to try one of the dishes of the day – a decent scaloppina Val d’Itria (veal with melted scamorza, €22), served with delicious homemade pasta (something that it is getting increasingly hard to find in Brussels Italian restaurants). Only the dessert was a little disappointing: our glace aux figues turned out to be just vanilla ice cream with a few pieces of candied figs on top – a bit miserly for €8.40.
