Het is een goedbewaard geheim dat Brussel met Saburo Inada (van Inada in Sint-Gillis) een gastronomische éminence grise in huis heeft. Purist Inada heeft zijn knowhow gelukkig overgeleverd aan de jonge chef Laurent Balancy, die recent de ploeg van Le Tournant is gaan versterken, geruggensteund door Denis Delcampe, de omgeschoolde producent van de langspeler Au cul du loup. Balancy, afkomstig van La Réunion, veranderde radicaal de koers van Le Tournant, dat met zijn mix van traditionele Franse kost – als varkenskaantjes, terrines en kalfswangetjes – en internationale gerechten – als rougaille, een zelfgemaakte curry en ceviche (rauwe vis gemarineerd in citrussap) – sowieso al geen doordeweeks restaurant was. Om de reikwijdte van de koerswijziging, de spontaneïteit en gastronomische generositeit ten volle te kunnen ervaren, kiest u best voor het viergangenmenu (€36). Toen wij er aanschoven, viel de aan één zijde gebakken sardine meteen in het oog. Vergezeld van komkommer, venkel en sojasaus bood de vis ons een frisse start van de maaltijd. De mooie opener werd gevolgd door een uitstekend stuk zeebaars, met een groene saus op basis van visbouillon, koriander en peterselie, die de culinaire kunst van Inada opriep. De intensiteit nam nog toe toen we een gebraden kwartel kregen voorgezet met puree van zwarte Aomori-look – een wonderlijk Japans kruid –, spinazie en smaakvolle wortels, die met een combinatie van verfijning en explosieve kracht op onze smaakpapillen toesloegen. Als afsluiter kregen we pastinaakijs met een financier (een amandelgebakje) en gekruide rodevruchtengelei – wat ons voor de twee collega’s in de keuken een mooie toekomst deed voorspellen. In de eetruimte voorzien de twee enthousiaste patrons, Philippe Mesnier en Baptiste Lardeux, de gerechten van informatieve commentaar en serveren aangepaste wijnen.

Il s’agit de Saburo Inada, fou furieux de la cuisine qui évolue dans son restaurant éponyme de Saint-Gilles. Bonne nouvelle, ce puriste a transmis son savoir à un jeune chef, Laurent Balancy, qui vient de débarquer au Tournant, adresse déjà chroniquée dans ces colonnes. Avec Denis Delcampe - producteur reconverti à qui l’on doit le long métrage Au cul du loup - en guise de second, ce talent venu de La Réunion offre un virage à 180° à cette enseigne déjà atypique en ce qu’elle panache plats du terroir français – rillons, terrines, joues de veau… - et préparations world food – rougaille, curry maison, ceviche… Pour prendre la mesure du changement, il faut opter pour le menu 4 services à 36 euros, soit un grand moment de spontanéité et de générosité gastronomique. Lors de notre visite, une sardine cuite à l’unilatérale a d’emblée retenu notre attention. Souligné de concombre, de fenouil et de sauce au soja, le poisson offre au palais un début tout en fraîcheur. Cette belle ouverture est suivie d’un morceau de bar de belle qualité, sauce verte sur une base de fond de poisson, de coriandre et de persil, qui fait le lien avec l’art culinaire tel qu’Inada le pratique. Ensuite, la montée en puissance se poursuit avec une caille rôtie accompagnée d’une purée à l’ail noir d’Aomori - un merveilleux condiment venu du Japon - des épinards et surtout des carottes au goût concentré. En bouche, finesse et explosion gustative. On termine avec une glace au panais et financier avec gelée de fruits rouges au piment qui fait dire que les deux compères en cuisine pourraient devenir des « grands de demain ». En salle, les patrons, Philippe Mesnier et Baptiste Lardeux, accompagnent les préparations de commentaires pertinents, de vins précis – entre autres le Bois des Merveilles de Jean-Baptiste Sénat… - et surtout de passion.

EN -- It is a secret, well-guarded by those in the know, that Brussels has a gastronomic eminence grise by the name of Saburo Inada, who operates in the eponymous restaurant (Inada) in Sint-Gillis/Saint-Gilles. Thankfully, the purist Inada has passed on his know-how to a young chef, Laurent Balancy, who has recently arrived at Le Tournant (which we have reported on before in these columns), where he is seconded by Denis Delcampe, who produced the feature film Au cul du loup. Balancy, who is from La Réunion, has introduced a radical change of direction at Le Tournant, which – with its mix of traditional French fare such as rillons, terrines, and veal cheek and international dishes such as rougaille, its very own curry, and ceviche – was never your typical restaurant anyway. To fully appreciate the extent of the change, you should choose the four-course set meal for 36 euro, for an experience of spontaneity and gastronomic generosity. The day we were there, a sardine cooked on one side immediately caught our eye. Accompanied by cucumber, fennel, and soy sauce, the fish offered the palate a really fresh start to the meal. That fine opening was followed by an excellent piece of sea bass, with a green sauce based on fish stock, coriander, and parsley, recalling the culinary art of Inada. The increase in intensity continued with a roast quail accompanied by purée made with black Aomori garlic – a wonderful Japanese condiment – as well as spinach and highly-flavoured carrots, which hit the taste buds with a combination of delicacy and explosive power. We finished up with parsnip ice cream with financier (made from ground almonds and egg white) and spiced soft fruit jelly – which left us thinking that the two colleagues in the kitchen have very bright futures indeed. In the dining room, the two enthusiastic patrons, Philippe Mesnier and Baptiste Lardeux, provide informative commentary on the dishes and serve appropriate wines, including Jean-Baptiste Sénat’s Bois des Merveilles.
