Agathe and her husband Gabriel opened Holy Smoke seven years ago in Saint-Gilles, near the Halle Gate. The restaurant is dedicated to American 'low and slow' cuisine and their shared love of barbecue. "It's all about choosing good meat and then seasoning it very simply, respecting Texas traditions. And our bar is all about American whiskeys."
