Barbecue restaurant Holy Smoke is owned by a French couple. But it was in the USA that co-owner Gabriel got to know barbecue culture. "The brisket is the typical piece of meat on Texan barbecues. We let it smoke for twenty hours." And also brought over from the US: the habit of drinking whisky and cocktails while eating. "We suggest a whisky according to the type of meat."
