Etienne Boissy is originally from France and inherited the love of cheese from his grandmother. After meeting his partner Bénédicte in Lyon, he decided to open a cheese shop on the Chaussée de Charleroi in Saint-Gilles. "We have many customers with many different wishes. That's why we also sell Spanish, English, Italian and Swiss cheese."
